Our Cheese

Process and Style:

A washed curd style of cheese – ripened and washed during 4 to 6 weeks of aging.

Flavor Notes:

Strong exterior with mild sweet interior, much like our Buck Rocky.

Uses:

Wonderful  with beer on a warm day or great for cooking when stronger flavors are desired – for example with scallop potatoes.
